On September 16, we will explore the promises and risks of biotechnology through the lens of cultured meat, or cellular agriculture more broadly. This is a technology that promises less animal suffering, reduced antibiotic use, and less pressure on the environment. But food is emotional, and its production is embedded in a vast system. How do these technological developments relate to our values, eating habits, and cultures? And what do they mean for the various stakeholders in the chain, from farmers to chefs and consumers?
